At home I am completely surrounded by lovely antipodean neighbours ( 2 Australians and a Kiwi ) and so am in the perfect position to announce that Barbecue season is officially open!

I will admit to being a latecomer to the joys of the barbie. As a vegetarian I have spent too many years munching on badly cooked sweetcorn while listening to the ecstatic moaning of those tucking into chops and hamburger to really appreciate the nuances of grilling!  However all that changed when I discovered a seminal publication from the US grandiosely entitled 'The Barbecue Bible'. The author is, apparently, the undisputed King of the Grill and 500 is a lot of recipes, including vegetarian dishes, salads and some great puddings too. In the interests of transparency this book is definitely meat-centric, however it has so many wonderful additions including sauces and marinades, fish and veggies ( the Hasselback Potatoes with Reggiano is a favourite) that you can cook for carnivore, vegan and vegetarian friends with confidence and flare. No excuse to wheel-out charred steak and potatoes in foil - this is gourmet grilling!

Decent utensils are essential when slaving over a hot coal,  so once you have donned you leather apron( see last week's missive) you need to get tooled-up. My personal tip is that fork and flipper/spatular beats tongs - I find the old one/two is actually more practical as sometimes the food is slippery and makes a bid for freedom ending up in the flames or on the floor so spearing it is a better way to ensure a good grip. We have brought in the perfect duo - stainless steel with wooden handles and leather straps for hanging. I would also recommend the Hamburger Press which makes perfectly round homemade burgers - there are a number of recipes in the 'Bible'.

Gloves - essential I think as we have all managed to burn ourselves when cooking outdoors not on the embers but the tools or the side of the barbecue etc - it ruins a lovely afternoon and is unnecessary so always wear cotton/silicon gloves for a good grip and double lining to prevent blisters! These have BBQ on them just for fun.
Snitch Meat Board

Finally a great carving board is very useful when cooking meat and the 'Snitch Meat Board', handmade from English Oak, is designed specifically for the purpose. Juices will flow into its grooves and can be released back onto food (or into gravy) with the release of the wooden plug. Best design in the world and so simple!
